It wouldn’t be Christmas without plenty of homemade baked goods. But the question is, how can you eat baked goods and NOT gain weight or get a horrible sugar hangover?
You do it the Gundry way. That means making a few easy swaps to your holiday treats:
- Swap lectin-loaded wheat flour for high-protein coconut or almond flour
- Replace gut-destroying sugar and corn syrup with Stevia
- Use extra virgin olive oil (or coconut oil) instead of shortening
Remember, even ‘healthy’ whole grain flour is full of toxic lectins that destroy your gut and lead to all kinds of illness, weight gain, and fatigue. That’s why #1 is SO important.
Now, I’m the first to admit… I love a healthy baked treat. But honestly, I just don’t have the time to bake. That’s why I created my 90-second mug muffin. It’s gluten-free, sugar-free, and it’s ready in a flash. Watch this video to learn exactly how I make it:
Try out both holiday versions if you like: a spicy eggnog version and my personal favorite — chocolate peppermint.
Festive Eggnog Microwave Muffin
Ingredients:
1 T coconut oil
1 T olive oil or Macadamia Nut oil
1 T Coconut flour
1 T Almond Flour
½ tsp. baking powder
Pinch Nutmeg
Pinch cloves
Pinch salt
1 packet stevia
1 drop rum flavoring (optional)
1 T water
1 Omega-3 egg
Stir all ingredients thoroughly in the mug, then let it sit for a few seconds. Microwave on high for 1 minute, 25 seconds. Remove with a pot holder, invert, then shake out the muffin. Enjoy!
Now, if eggnog isn’t your thing, don’t worry – here’s that delicious chocolate-peppermint muffin. And thanks to the dark chocolate, they’re loaded in polyphenols.
Chocolate-Peppermint Gluten Free Muffin
Ingredients:
1 T coconut oil
1 T olive oil or Macadamia Nut oil
1 T Coconut flour
1 T Almond Flour
1 tsp cocoa powder
½ tsp. baking powder
Pinch salt
1 packet Stevia
¼ tsp peppermint extract
1 T water
1 Omega-3 egg
1 tsp finely chopped bittersweet chocolate
Stir all together in Mug, let sit for a few seconds. Microwave on High for 1 minute plus 25-30 seconds. Remove with a pot holder and invert. Shake out muffin. Enjoy!
