There are a few things that make this recipe special. At the top of that list –

The seaweed!

Nori is a form of seaweed that has been flattened into squares or strips, and it’s a great stand-in for a tortilla.

And seaweed is also rich in health-promoting compounds, including:
  • Dietary fiber
  • ω-3 fatty acids
  • Essential amino acids
  • Vitamins A, B, C, and E1

And, maybe you’re a little nervous about working with seaweed, but it’s really very simple. Just pick up a bamboo mat (for rolling sushi) – available in the Asian foods section of most supermarkets. This is the ticket to helping you roll the tightest seaweed wrap.

Now, let’s talk about cilantro.

Cilantro is a delicious herb that is closely related to parsley. It’s also a tasty addition to soups, salads, and of course … this seaweed wrap!

And, the nutrients in cilantro are connected to range of health benefits, like:

  • Supporting a long, healthy life
  • Keeping your heart healthy
  • Supporting healthy skin and hair

The third power ingredient in this tasty seaweed wrap is avocado. Dr. Gundry recommends you eat a whole avocado every day. Why?

Well, the avocado helps promote healthy blood lipid profiles. That’s a pretty big deal. Also, it’s likely the fat-soluble vitamins and phytochemicals in avocados help support your cardiovascular health. Furthermore, research suggests avocados might even support weight management and healthy aging.3

So, are you ready to make this wrap?

Dr. Gundry’s Chicken-Arugula-Avocado Seaweed Wrap with Cilantro Sauce

Prep time: 15 minutes
Serves: 1

Seaweed Wrap | Gundry MDWhat You’ll Need:

  • 1 tablespoon avocado oil
  • 4 ounces boneless, skinless pasture-raised chicken breast, cut into 1⁄2-inch strips OR skip this for a vegan recipe
  • 2 tablespoons freshly squeezed lemon juice
  • 1⁄4 teaspoon sea salt, preferably iodized, plus additional to taste
  • 1⁄2 avocado, diced
  • 1 cup arugula
  • 1 sheet nori (sushi seaweed)
  • 4 green olives, pitted and halved
CILANTRO DIPPING SAUCE
  • 2 cups chopped cilantro
  • 1⁄4 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1⁄4 teaspoon sea salt, preferably iodized

What To Do:

The Filling

1. First, heat the avocado oil in a small skillet over high heat.

2. Then, place the chicken strips in the hot pan and sprinkle them with 1 tablespoon of the lemon juice and the salt.

3. Next, sauté the chicken strips for about 2 minutes. Turn them and sauté them for another 2 minutes, until cooked through.

4. Finally, remove them from the pan and reserve. Then, just toss the avocado in the remaining tablespoon lemon juice and season with salt.

The Dipping Sauce

5. Place the cilantro, olive oil, lemon juice, and sea salt in a high-powered blender. Process on high until very smooth.

To Serve

6. Arrange the arugula on the bottom half of the seaweed sheet.

7. Then, top with the chicken, avocado, and olives, and sprinkle with salt.

8. Carefully roll it all into a tight seaweed wrap, sealing the end with a little water.

9. Last but not least, cut it in half and serve with the cilantro dipping sauce.

To make this wrap vegan or vegetarian:

Simply replace the chicken with grain-free tempeh, hemp tofu, acceptable Quorn products, or a cauliflower “steak.”
