In a medium-sized saucepan, bring about 3 cups of water or broth/stock to a rolling boil. Add 2 cups of riced cauliflower, 1 tablespoon of extra virgin olive oil and ¼ teaspoon of iodized sea salt (optional). Stir until contents are well incorporated and simmer uncovered for 2-3 minutes or until the “rice” is tender and hydrated. Drain excess liquid and fluff with a fork.

In a microwave safe bowl, combine 1 cup of water or stock/broth with 1 cup of riced cauliflower, ½ tablespoon of extra virgin olive oil, and a pinch of iodized sea salt (optional). Stir until contents are well incorporated. Microwave uncovered on HIGH for 2 minutes or until the “rice” is tender and hydrated. Drain excess liquid and fluff with a fork.
